Tokajer
The name comes from the Hungarian town Tokaj. Tokajer is not only a dessert wine, but also a normal white wine. The most important vine-kind is the Furmint. Besides there is also Hárslevelü and Sárgamus-Kotály. Still today, Tokajer barrels are stored in narrow, pitch-black tunnels, knocked out of lava, for three to seven years. Tokajer is bottled in typical white half-litre bottles. It has a specially long-neck shape.
Tokajer esszencia (Tokajer essence): The chosen, overripe and noblerotten grapes are placed on press-tables, where their skin cuts open. The juice runs out without any pressure from pressing. This extremly sugery cider is put into barrels, which are called "Gönci hordó" in Hungary. It ferments very slowly because of the high amount of sugar, therefore it has to stay in the barrel for fairly a few years. The Tokajer essence is very sweet and hardly available on the market.
Tokaji Aszú:Aszú means 'selection procedure'. When the juice for the Tokajer essence has run out, remaining raisins, like small berries are made to mash in small pots (butten). The mash is added to the wine, which is pressed of noble rotting grapes (Tokaji Szamoruodu). Depending on how many butten of Aszú are added to the wine, it is differed between "two-buttian" up to "six-buttian" Aszú-wines. The mash is leached for 12 to 36 hours, then pressed again and the wine starts fermenting. Ripening takes at least three years.

Tom Dooley
Tom Dooleyis a Straight Bourbon Whiskey from Kentucky. Its round, piquant bouquet and mild taste are results of a careful selection of grain, professional distillation and a ripening time of six years in white-oak barrels. Alcohol content: 40 %.

Tomato-Ketchup
It is a spice sauce made of tomatos, winevinegar, salt, sugar, paprica, pepper, celeryseeds, clove, cinnamon, ginger, onion, garlic and nutmeg. Used eg for Prairie Oyster.

Tonic Water
It is a water clear sparkling lemonade also containing quinine, first produced by the swize Schweppers at the end of the 19th century. That Chinin is used must be shown clearly on the bottle after the Austrian law. Known products of the companies: Schweppers, Carlsberg, Tubourg, Faxe and Kinley.

Topinambur
The Topinambur-tuber coming from Middle America is also known as schocke of earth. Topinambur is a type of sunflower with light-brown, potato-like, eatable tubers. Usually it is harvested in spring and treated in a fermentation- and distillation process, which is similar to the one of the fruit distillation. Topinambur-Spirit is slightly bitter in its taste and a bit soily. Its charcter is similar to the character of gentian. Topinambur is mainly produced in the Black Forrest and sometimes aromatised with orange- and lemon peelings, onions, celery , caraway, peppermint, juniper and others.

Tormore
The Tomore Distillery was built in the Speyside-region, being the first totally new Malt-Whisky-Distillery, which was built in the Scottish Highlands in this century. The new building is a magnificence building of the Scottish Whisky-industry. The building works were finished in October 1959; the distillery belongs to Long John International and therefore to the Canadian-American Schenley-Group. Exported to Germany is : Tormore Speyside Malt 10 Years Old (43 %).

Trimbach
Since 1626, the Trimbach-Family has been working in wine growing in Alsace. The House is known for its excellent wines and is a pure family company today. Trimbach was once situated in Riquewihr and later in Hunawihr. After World War I, the rising demand of Trimbach-wines caused the move of the company to bigger buildings. It moved to the medieval town Ribeauville. Trimbach produces an excellent Marc de Spicetraminer. Other Eaux-de-vie available under the name Trimbach, are not distilled from Trimbach, but carefully selected from the House, before they are sold uunder the name Trimbach.

Triple Sec
Three times dry. Describes liquors, like Curacao, with a good quality and high amount of alcohol.
