Apples
Apples are the fruits of the apple tree, maturity and crop depend on the sort of apple and its geographical surrounding. If apples are stored correctly they will last longer. Apple juice and apple concentrates are made of the pomaceous fruit. Apple peeling and apple slices are often used for decoration. (Pimm's No. 1 - Fancy drink) German Apfel, French Pommes.
Apricot-Bitter
This is a Spice-Bitter with a strong Marillenflavour (Marille = Austrian Apricot), it is a bitter liqueur after the law, but never has to be consumed purely.
Aquavit
The writtings Aquavit and Akvavit come from Latin 'Aqua vitae' (water of life). In German-speaking areas, Aquavit is a spirit, produced from a distillate from herbs, spice or drugs, mainly caraway. The addition of ethereal oils is allowed. In other countries, like in Italy, Aquavit is the description of all pure clear spirits. In the Middle Ages, Aquavit (Aqua vitae) was produced from wine and later from potatos and since the end of the 17th century from grain. Those days, aroma-substances, like juniper berry, malt, honey, dill-herb and caraway, were used to add the flavour. But time by time, caraway dominated the taste of Aquavit. One of the first producer of Aquavit was Isidor Henius coming from Thorn in Poland, who built up a distillery in Aalbourg at the south-bank of the river Limfjordes in 1846. Aquavit is different to a grain-spirit because it has a fine, aromatic taste, always dominated by caraway. According to the Danish production company A/ S Danske Spritfabrikker, Aquavit can develop its taste best, when having an alcohol content of 40 to 45 Vol.- %. Aquavit is consumed ice-cold in the northern countries. Regulations by law: In Austria Drink-spirit from Monopoly-alcohol with a minimum alcohol content of 35 Vol.- %. In Germany Drink-spirit (Special Spirit) with a minimum alcohol content of 35 Vol.- %. In Switzerland Drink-Spirit with an minimum alcohol content of 40 Vol.- % Production Base of the Aquavit-production is finest filtrated 96 Vol.- % alcohol, finest caraway-seeds from Denmark and Holland as well as herbal mixtures, which is a secret of the production-company. Distilled or dismineralised water is also one of the main ingredients. Distillation A distillate is produced from caraway, anise and other spice-substances in the Patent-Still-Procedure and by adding alcohol. Only the middle running is used for further refining. Mixing The spice-distillate is mixed with neutral alcohol and sometimes also with distilled or dismineralised water in the so-called Aquavit-tank until the wanted taste-neutrality is reached. Afterwards this product is storeg to ripen. Storage Top-qualities are stored in Sherry- or port-wine barrels.
